HOT BUCKWHEAT BREAKFAST

Ingredients
  

  • 1 CUP WHOLE BUCKWHEAT OATS
  • 2 CUPS UNSWEETENED VANILLA ALMOND MILK
  • 1/4 TSP GROUND CINNAMON
  • 1 MASHED BANANA
  • 2 TBSP GROUND FLAXSEED
  • 2 TBSP CHOPPED WALNUTS
  • PINCH OF SEA SALT

Instructions
 

  • Place the buckwheat, milk, cinnamon, salt and mashed bananas in a medium saucepan.
  • Bring to a boil, stirring frequently.
  • Cover the pan and reduce heat to low. (Keep on eye on it! Mine boiled over, even at low heat, so you may need to vent the lid.)
  • Simmer for 15 to 20 minutes, until the buckwheat is tender.
  • Top with ground flaxseed and chopped walnuts.
  • When it’s done, there will be no more liquid.

Notes

I added additional almond milk to my bowl (that’s also how I like to eat oatmeal). Enjoy!
