HOT BUCKWHEAT BREAKFAST

Ingredients
  

  • 1 CUP WHOLE BUCKWHEAT OATS
  • 2 CUPS UNSWEETENED VANILLA ALMOND MILK
  • 1/4 TSP GROUND CINNAMON
  • 1 MASHED BANANA
  • 2 TBSP GROUND FLAXSEED
  • 2 TBSP CHOPPED WALNUTS
  • PINCH OF SEA SALT

Method
 

  1. Place the buckwheat, milk, cinnamon, salt and mashed bananas in a medium saucepan.
  2. Bring to a boil, stirring frequently.
  3. Cover the pan and reduce heat to low. (Keep on eye on it! Mine boiled over, even at low heat, so you may need to vent the lid.)
  4. Simmer for 15 to 20 minutes, until the buckwheat is tender.
  5. Top with ground flaxseed and chopped walnuts.
  6. When it’s done, there will be no more liquid.

Notes

I added additional almond milk to my bowl (that’s also how I like to eat oatmeal). Enjoy!
