BLACK BEAN BROWNIES

Ingredients
  

  • 15 OUNCES CANNED BLACK BEANS, DRAINED
  • 3 EGGS
  • 3 TBSP VEGETABLE OIL
  • 1/4 CUP COCOA POWDER
  • 1 PINCH OF SALT
  • 1 TSP BAKING POWDER
  • 1 TSP VANILLA
  • 3/4 CUP SUGAR
  • 1 TSP INSTANT COFFEE
  • 1 CUP CHOCOLATE CHIPS
  • 1/8 CUP CHOPPED NUTS

Instructions
 

  • Blend all the ingredients except the chips in a blender until smooth.  Pour into a greased 8x8 square pan and cover the top with the chips, add more if needed. Chopped nuts can also be added to the top. Bake at350 for about 30 minutes until the top looks dry. The sides may pull away from the edge of the pan.

Notes

I modified the black bean recipe to add a stronger chocolate taste and some chopped nuts.  The meal can be gluten free as well as vegetarian.
