SQUASH SOUP

  • 1 PEELED AND SEEDED BUTTERNUT OR ACORN SQUASH
  • 1 LARGE ONION
  • 1 PEELED, CORED DICED APPLE
  • MINCED GARLIC TO TASTE
  • CHICKEN BROTH

Method
 

  1. Sauté chopped onion
  2. add a peeled / cored apple that has been diced, add minced garlic
  3. Add this to chunks of peeled, seeded squash.
  4. Add chicken broth to pot & Slowly simmer until squash chunks are no longer chunks. Add seasoning as you like
  5. Purée, ladle into a bowl, add roasted pecans, pepitas, or even croutons and enjoy.
