Method
- In a medium size saucepan melt butter over medium-high heat.
- Add crushed garlic and whole sprigs of rosemary to the saucepan.
- Add scallops, cook for 2 minutes on each side (or until desired consistency).
- Remove the garlic and rosemary from pan.
- Serve alone or over rice/pasta.
Notes
I tried this new recipe of scallops but modified it to be over rice instead of pasta to make it less carb and less calories. It was absolutely delicious and I will definitely make it again. It was a small portion which is perfect for me as the only person in the household the majority of the time and it was so quick to prepare.
